Tomato Quetta #2

Tomato Quetta #2 – Rich and tasty without any heat

This version of Tomato Quetta is full of flavour but without the heat of #1. This is a rich red coloured chutney which is bursting with flavour.


1.2 kg tomatoes, peeled and chopped
1 onion, diced
1/2 red capsicum, diced
15 grams fresh ginger, minced
15 grams garlic, minced
60 grams sultanas
225 grams sugar
30 grams salt
1/2 teaspoon curry powder
1/2 cup vinegar
1 tablespoon cornflour mixed with a little extra vinegar


  1. Combine all of the ingredients except the cornflour and extra vinegar in a large heavy saucepan and bring to the boil, lower heat and simmer for about 45 minutes until quite thick, stir regularly
  2. Add the cornflour and vinegar mixture and cook for 2 – 3  minutes longer
  3. Bottle into sterilized jars and seal tightly
