Tomato Quetta #1
This is a hot and spicy rendition of Tomato Quetta with the heat provided by a couple of habenero chillis fresh from the garden. Feel free to substitute for another chilli variety and spice it up as little or as much as you want.
Ingredients
2 kg of tomatoes, peeled and diced
1 3/4 cups of sugar
1 cup raisins
1 cup cider vinegar
3 tablespoons ginger, minced
2 tablespoons salt
4 large tablespoons garlic, minced
2 habanero chilli, finely chopped
Method
- Combine all of the ingredients in a large heavy saucepan
- Bring to boil, lower heat and simmer uncovered, stirring often, until very thick, about 2 hours
- Ladle into hot sterilized jars and seal tightly
