Tomato Quetta #2 – Rich and tasty without any heat
This version of Tomato Quetta is full of flavour but without the heat of #1. This is a rich red coloured chutney which is bursting with flavour.
Ingredients
1.2 kg tomatoes, peeled and chopped
1 onion, diced
1/2 red capsicum, diced
15 grams fresh ginger, minced
15 grams garlic, minced
60 grams sultanas
225 grams sugar
30 grams salt
1/2 teaspoon curry powder
1/2 cup vinegar
1 tablespoon cornflour mixed with a little extra vinegar
Method
- Combine all of the ingredients except the cornflour and extra vinegar in a large heavy saucepan and bring to the boil, lower heat and simmer for about 45 minutes until quite thick, stir regularly
- Add the cornflour and vinegar mixture and cook for 2 – 3 minutes longer
- Bottle into sterilized jars and seal tightly
